Pumpkin Parfait

Whip this up and have everyone Ooohing and Ahhhing over this healthy delicious treat as you break tradition – in a good way! Try this vegan gluten free dessert instead of the traditional pumpkin pie

Pumpkin Parfait

  • 1 can organic pumpkin
  • 6 ounces yogurt (I used coconut yogurt)
  • 4 ounces granola (I used Purely Elizabeth pumpkin fig)
  • 2 teaspoons maple syrup
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1/8 teaspoon ginger powder
  • 1/8 teaspoon cardamom

Mix pumpkin, maple syrup, and spices together in a bowl.  Layer pumpkin, then granola, then yogurt, then granola and top with more pumpkin in a dessert glass or bowl.  Makes 2-3 servings depending on the size of your dish.
